Il s’agit d’une technique culinaire internationalement connue et se trouve invariablement dans la majorité des cartes et menus de milliers de restaurants dans le monde entier. Mais curieusement, l’ignorance de la véritable recette de la paella est très répandue.</p>

<p>En 1995, lors de la première édition de cette web, on ne pouvait pas trouver plus d’une douzaine de pages comportant des recettes de paella. La quasi totalité d’elles étaient rédigées en anglais et les recettes étaient le fruit des essais culinaires de n’importe quel amant de la paella.J’ai donc décidé d’apporter mon petit grain de sable et ai crée ce site. Il y a des milliers de recettes, préparées avec ou sans riz que ne connaissent seulement certains privilégiés, elles son un fidèle témoignage des traditions culinaires régionales et populaires, comme c’est le cas de la cuisine de l’Albufera. </p>
